Several weeks ago, I was forced to replace a very expensive piece of equipment at my eating place. A convection oven that I inherited with the building suddenly stopped working. I called a repair service along with the machinery medics have been quickly dispatched. Sadly, the news was harsh… I would need to get a replacement unit. The technicians that became available were unable to repair it. In actual fact, they had no idea precisely why the unit had unsuccessful, only that they wouldn’t be able to fix it. I personally contacted my eatery equipment supplier, which, it turns out, had purchased the now defunct component to the previous seller. When I told him or her about the old model and that I would need a better, I expected him for being ecstatic, knowing total well that my wallet was about to look at a major hit. As a substitute, he surprised people by asking me a series of questions about the old unit.

 

With his assistance over the phone, we were able to dig up the unit up and running in about twenty minutes. That’s incredible, I think. The problem appeared to be caused by a lack preventive maintenance measures into the oven. We were of thebelief that we were taking good care of it, though truthfully, I never frustrated to check and see in case there was more that we needed to be doing when it comes to preventive maintenance.

A short time later, I got instructions from my gear supplier, with requirements on every tool in my restaurant, with the necessary preventive maintenance measures that I should really take with each one. The majority of these I really already knew concerning, but there were several I was unaware of. Since I received the correspondence, my staff is performing all the encouraged preventative maintenance steps and we really notice a difference on the items we were neglecting to use proper care of.

 

Preventive care is important in the restaurant business, especially with the money necessary for replacing an expensive model. The only way to take proper care of your current equipment, however, is usually to know it well enough to understand what preventive maintenance measures needs to be performed.
